Traditional Dutch Cooking Workshops and Nomzing

We'll be cooking some traditional Dutch dishes at [[Villages:Village:Camp_Holland|Camp Holland]]. Why? Because we can, and sharing food is fun!

=Recipes=

==Pannenkoeken (Dutch pancakes) ==
Here's the recipe [[User:Diggie|Diggie]] ([[User talk:Diggie|talk]]) used to make the pancakes:

You'll need the following items to serve 4 people:
* 400gr flour (add 100gr per extra person)
* 800ml milk (add 200gr per extra person)
* 3 eggs (add 1 egg per two extra people)
* some sunseed oil
* toppings like stringy bacon (or other meats), cheese, jam, [http://nl.wikipedia.org/wiki/Stroop stroop], lemon curd, sugar, powdered sugar, pieces of fruit or vegetable, honey, Marmite, etc.

Stuff you'll need:
* A bowl to mix in
* A whisk
* A ladle
* A frying pan (∅ 42 cm is preferred ;)
* A spatula (wider is better)

Put the flour in the bowl. Whisk it loose first. Now add about half of the milk and use the whisk to make a smooth batter. Make sure there are no lumps of dry flour in the batter. When the batter is well smoothed, gradually add more milk until you've added all of it. Keep stirring to keep it smooth and without lumps. Then add the eggs and mix these well through the batter.

Heat up the frying pan and add a little oil. No more than a teaspoon is needed. Make sure the pan is hot, but not too hot (around 350°C is a nice temperature). This is just around when the oil starts to vaporise.

Now use the ladle to pour the batter into the pan. Make sure you don't put in too much, or the batter will not be dry enough on top by the time the bottom is nicely (light) golden brown. Roll the batter around in the pan with a large circular motion, to distribute it evenly.

Wait until the top of the pancake is dry and the bottom is starting to turn light brown, then use the spatula to first loosen the whole pancake from the pan, and then turn it over. If you're feeling especially heroic, try to flip the pancake in the pan, because, well... you know.

The other side will be ready a bit sooner, so keep an eye on the bottom from time to time.

Take the pancake out, serve immediately or stack on a separate plate (doesn't need to be heated if you're baking a whole stack of them).

Repeat until all batter is used up or feeling bored.

===Toppings & variations===
Most toppings are simply added after the pancake is baked. With stuff like jam or fruit it's easiest to roll the pancake up and eat it that way.

Some toppings however are better if added before or during baking:
* Bacon - Bake a couple of thin rashers of smoked bacon on one side. Turn each rasher when they start to crinkle and then pour the batter on top. Bake on both sides normally. Pro-tip: Serve these with ''stroop''
* Other meats, like salami, chorizo, ham, etc. - Same as with bacon. Note that lean ham should be baked really short, or your pan will turn into a tiny disaster area!
* Cheese - Put batter in the pan (be extra frugal about the amount) and put slices of cheese on one half of the wet batter. Fold the other half on top so you get a closed half-moon shape. This can usually be done quite soon, but you may have to wait for the batter on top to dry a little. Now bake both sides as a normal pancake.
* Chocolate - Same as with a cheese pancake. ''Hagelslag'' is an ideal way of putting chocolate in a pancake, chocolate spread is not.
* Vegetables - Stir-fry some vegetables in a separate pan. Things like leek, carrots, broccoli, cauliflower, snow peas, green beans, corn, etc. will all work nicely. You can choose to add a little broth or soy sauce to spice them up. Now bake a normal pancake, or one with meats in them. When it's done, put it on a plate with the vegetables on top and roll it up into a roll.
* Fluids - Most types of liqueur and some soda's make for excellent pancake improvers. Bake a normal pancake on one side and add a dash of the fluid a the side of the pan. Then turn the pancake over and bake like normal. In case of highly alcoholic fluids, you can choose to flambé your pancake. Make sure you have a lid nearby in case the fire goes out of your control. Note: If you choose '''not''' to flambé your pancake but you're adding highly alcoholic fluids anyway, be aware that the fumes coming from the pan are mostly vaporized alcohol, so be careful with any open fires nearby, including the one under the pan!
* One extra special pancake variation is to make pancake-granola-cookies. You will have to change the batter for this to work though, so usually this is something to do after making the savoury pancakes. Just add the following to the 'normal' batter:
** A good amount of honey
** A few handfuls of muesli, granola or cereal oats (less whole nuts is better, as these can be problematic when flipping the pancake over)
** A handful of raisins
** Optionally: Diced or grated apple, dried apricot, dates, succade, etc.
** Optionally: Seeds, e.g. sunflower seeds or linseed
** A pinch of cinnamon powder, and optionally (very) little ground white pepper, cardamom, cloves, ginger, nutmeg and such
** An extra dash of sunseed oil, to make sure the honey doesn't stick to the pan too much
: Mix well and leave for a while so all new ingredients can soak up a bit.
: Mix well each time before pouring into the pan with the ladle. Don't be too frugal about the amount of batter you pour in. These cookies should bake to around 1cm in thickness. It also helps to keep them small, around 10cm in diameter.
: Flip over when the top is starting to dry and the bottom is deep golden brown (the honey caramelises, causing a darker colour).
: These cookies can be eaten hot (optionally with some ice cream) or cold, and make for a perfect breakfast. It's almost like the Dutch version of the American pancake (in other words, the origin of the American pancake).
* Other stuff: If you're bored with the above and you're ready to try other stuff, go ahead. All you really need is some common sense and an idea of what would taste good. Pancakes are like a very forgiving edible platter, a bit like pizza.

O hai. I'm Moem and I came to EMF to hang out with the other Hack42 slackers and to tickle your nostrils and give you instant foodgasms with delicious freshly baked hand made artisanal STROOPWAFELS.

* How to crimp ethernet cable sheets were brilliant. They made sure everyone was using the same standard and anyone new to crimping could carry them to remember the order.
* There were lots of crimping tools and wire strippers to borrow during set up.
* Vehicles: there were enough to get stuff around the site but not too many that I was worried about getting run over.
* EMF hi vis jackets were awesome.

** Maybe ask Cambridge & District CAMRA who provided the toilets for Cambridge 41st beer festival - they had some fairly nice flushing toilets which came on a trailer, a bit like the posh wash showers. I think Jonty mentioned that a lot of providers were put off by the fact that we're a festival. Well, if these guys are ok with providing for a beer festival, they must be pretty brave! -[[User:Alecjw]]
** Definite vote for the trailer-style flushing toilets, with multiple cubicles (+sinks, lights and mirrors) on one tow-along trailer, just like the showers. I've seen these at MANY festivals - though, granted, usually only in 'posh' camping/press/VIP areas. Should be possible if you manage to convince the providers that we're not a rowdy bunch of drunken teenagers!
** A clue to the problem with the chemical toilets is in the name: no chemical sanitiser/deodoriser was used in any toilet I tried. * Info desk didn't seem to have the details wrt. volunteers, so when I volunteered I was sent out and found I wasn't needed. Suggest splitting the job - having a volunteer team leader (or several, in shifts) whose job it is to know who is where and also to make sure nobody gets stuck on a gate for 12 hours (eg. rotating people to more interesting places every couple of hours). * Having a tent for Badge Operations would be pretty handy - similar size to the workshop tent, that could be set up as a production line / fixing area if needed. * Floor panel walkways were very slippery in the morning after rain, not sure if there's someway this can be improved

* Ask for an optional email address for each ticket to go on your announce only mailing list. Only the person that bought the tickets got your emails and they were slow to forward them on meaning most messages were received too late.

* Ask people who want to give workshops if they'd be happy to give more than one session - the blacksmiths' output was extreme, but even giving two or three sessions would greatly increase the % of attendees who could sign up.
** Many workshop submissions specified that already, the issue was actually with finding space for them as we only had one workshop tent. We'll have many next time! --[[User:Jonty|Jonty]]
* Sign-ups some kind of "express preference" systems, so most people (including those who don't check email regularly) can get at least one of their top choices, rather than first-come-first-served.

*** That is actually much harder to build anything decent with. The badges are normal arduinos and all the libraries are available, you don't have to use the EMF OS, it was designed for people to write normal Arduino code for! --[[User:Jonty|Jonty]]
* EMF is unlike other festivals - for a large number of people, carrying kit to/from car is impractical and security walking every car through site is time-consuming and volunteer-intensive (not to mention the fact that cars driving off site weren't walked off). Suggest that the parking area is directly next to and easily accessible from the camping area (e.g. just separated by hay bales to stop cars driving on to the camping area).
** As a village/car user you could generally provide your own security person walking in front of the car. This works 2 fold: 1) security doesn't need to walk for you 2) less waiting time for you since you already provide someone to walk.
** The plan for this was to allow people to drive onto site on the Thursday evening. It wasn't very well communicated and we had a *very* tight setup schedule so we needed to reduce this as much as possible. This is ultimately an issue with our setup schedule
** It wouldn't work on this site, but for some locations it might be possible to have a drop-off point close to camping (with a limited number of cars at one time), better idea than having cars (ignition source) close to tents. Some people were taking the mickey on Monday morning, many people driving onto site that could have carried things instead tying up volunteer resources to escort them.
* Provide job descriptions for traffic control, parking and entrance gatehouse. Instructions were handed from volunteer to volunteer by word of mouth and whilst common sense prevailed, it would have been useful to have instructions as to what to do under certain circumstances and a list of answers to FAQs, e.g.:
** What if somebody didn't have a parking ticket and wanted to park?
** What if somebody was just dropping off - where should they do this?
** What times were shuttle buses running?
** What times the gates were open/closed?
** Have a priority queue for people with machine readable tickets (ie paper!)
** Volunteer training was lost by the wayside for some roles, we'll fix that. --[[User:Jonty|Jonty]]

For many the whole event will be like that anyway - it wouldn't hurt to help out those shyer / newer / more awkward. Maybe there could be a welcoming/newbies/friendliness team prior to next time who came up with stuff to try of this nature (all utterly optional, of course)?
* More flying cars (requested by someone leaving site when asked what they thought was lacking)
* Dual controls quad-copter training. So someone can learn to fly and know the "instructer" can take over if it gets out of hand.
* A few people with cars were making trips out to the outdoor supplies store in Milton Keynes for camping stuff, might be worth figuring out if we could do a more official shop run to get stuff for people who don't have cars.
